True Osetra caviar, with its creamy texture and nutty flavor, is one of the finest sturgeon caviar in the world. While often referred to by its scientific name, Acipenser Gueldenstaedtii or Russian Sturgeon, as it was known as originating from the waters of the Caspian Sea, Black Sea and Azov River basins, it has been consumed since BC times. As sturgeon farming is a difficult task and highly regulated, caviar exponentially expanded to global market farming, so this and other sturgeon types are bred in different parts of the world in farm environments..
